On a 2001 CR-V is there a sight gauge to check flow of refrigerant, or did I need to check with a pressure gauge?

If the AC still works, it's charged. That's how most people check. You can get a can of r134a with a dispenser and gauge at most auto parts stores, check the pressure, and add refrigerant to your liking, but if it works ok, I'd leave it alone.
