I conveniently also have a 2018 Odyssey. The first thing I did was take apart the map lights on both vehicles to see if there was a simple way of doing this.
You shouldn't be taking any of the door apart. College Hill Honda has the install instructions for the accessories. You should find instructions for adding the mirror in the Civic or Accord.
It isn't much different for the CRV.
