If I have oil and filter changes performed at a non-dealer location, will this void the extended warranty? Also considering the oil dilution issue.
Would it have to be with Honda oil and filters?
As long as correct weight, synthetic oil and correct filter and keep paperwork for documentation?
Having work done at dealership can take much longer and be more costly.

No it will not void your warranty. It's the law, you can go anywhere to have service work done and also do-it-yourself. Keep all receipts during your ownership of the car. Keep a running log of everything ever done to the car, i.e. dates, details, performed by, and mileage. Records kept by you regardless of who or where service was performed is very important. Certainly follow your Maintenance Minder as to what service to perform. Doing maintenance sooner is ok and will not cause any harm. Our owner's manual has the information that we need to take good care of our car. Read it and rely on it.
