Is there a way to dial a phone number on the car’s screen?
I see an option for previously saved numbers.
Also, can previously saved numbers be deleted?

Dial by number can be done via voice, not that I'm aware via touch screen. Saved numbers--if you mean a Speed Dial, yes delete it via editing the Speed Dial screen. If you mean Call History, I don't see where you can other than clear the entire system or don't import the Phone Book (Phone Sync Off), which brings along Call History.

On my 2017 Touring the answer is yes, but not while driving – the dial screen is disabled when in motion.

I think that's standard on CarPlay (dial is disabled when in drive)
