I'm not familiar with choices for '15 but I went with a class III 2" Curt for my '13. I, too, wanted the hitch for a cargo carrier, bike rack, and custom light bar when towing behind my motorhome. My logic was 2" should be a more stable anchor for an off center load on the cargo carrier (wouldn't twist as much.) I also felt there may be more 2" accessories available.
Once I decided on 2", going with a class III was an easy (my tendency to always overkill) decision. You my want to read some of the "U Haul" threads on this forum before choosing them to do the install. Again, I'm not sure about the 2015, but the Curt was an easy DIY install for me at 73 years old with no lift. The undercar trimming they mention is simply a plastic cover that needs a section cut out. I've heard U Haul doesn't bother with trimming that. They just throw it away. Maybe true....maybe not...but I felt strongly that the panel should be re-installed. I even save the piece I cut out, trimmed it as necessary, and epoxied it back in to restore the original road grime protection.
You could pay a mechanic quite a few bucks for the install and still be cheaper that U Haul and have more control over the end result, IMHO.
